Executive Chef Alejandro Buzzalino brings plenty of energy to the kitchen at Salt & Brick in Calgary.
Grounded in classical cuisine but shaped by years in restaurants and travels around the world, Alejandro has a style that's very much his own. He's part of a new generation of culinary leaders making their mark on Calgary's and Canada's food scene.
So naturally, we put him in the People Who Give a Damn Hot Seat.
We hit Alejandro with a round of quick-fire questions about kitchen life, food, chef gear and a few things he had big opinions on.
What makes a good apron?
For Alejandro, it's pretty simple:
Comfort. You should barely feel it on you.
Hard to argue with that. And we couldn't agree more. When you're wearing an apron through an entire service, it should do its job without constantly reminding you that you're wearing it.
Interestingly, Alejandro is also firmly on Team No Pockets. We'll agree to disagree on that one. 😉
There's apparently no debate here. Sparkling water isn't just a preference, still water is out of the question. His other go-to? A What the Huck beer.
And coffee over tea because... "It's better."
