Bacon Wrapped Meatloaf
1 Lbs Smoked Bacon, sliced
2 Lbs Lean Ground Beef
1 Small Onion, diced
3 Cloves Garlic, minced
1 Egg Yolk
1 Tbsp Salt
1 Tbsp Pepper

  1. In a sauté pan, heat to medium-high, add a few drops of vegetable oil, and heat up. Add the onion and garlic and sauté until translucent. Remove from heat and set aside.
  2. In a mixing bowl combine the ground beef, onion, garlic, egg yolk, salt and pepper. Lightly mix ingredients together.
  3. Remove mixture from the bowl and form a log. Than take a large about of plastic wrap and place your strips of bacon across so they are slightly touching. Place your ground beef mixture on the bottom end of the bacon than roll until the strips of bacon are connected. Tightly wrap with plastic wrap than with foil.
  4. In an oven preheated to 400°, bake log for about an hour or until internal temperature of 165° is reached.
  5. Remove foil and wrap, and place back into the oven to crisp bacon.
  6. Slice into 1” thick portions, serve over top of mash and cover with mushroom jus.
  7. Yukon Gold Mash
  8. 4 Large Yukon Gold Potatoes, diced
  9. ¼ Cup Butter
  10. ¼ 35% Cream
Salt and Pepper, to taste
  1. In medium size pot, add the potatoes and bring to rolling boil and cook potatoes till they are fork tender. Strain potatoes and place in large mixing bowl.
  2. Add the butter, cream and season with salt and pepper, and mash potatoes together to your desired consistency.

Mushroom Jus
1 Lb Cremini Mushrooms, sliced
1 Cup Red Wine
2 Cups Beef Stock (or Broth)
1 Nub of Butter
Salt and Pepper, to taste

1. In a medium size sauté pan heat to medium and add a few drops of vegetable oil. Add mushrooms and sauté for two minutes. Season with salt and pepper.
2. Deglaze pan with wine and reduce by half.
3. Add Beef Stock, reduce by half.
4. Right before serving, stir in the nub of butter to finish the sauce.
5. Drizzle of meatloaf and mash.
